Ozone-Slurry Ice, Technology from Thai Experts by Faculty of Fisheries, Kasetsart University, Created to Maintain Aquatic Animals Freshness and Quality.

If we should think of the matter when fishermen had to spent their time out fishing that took several hours amidst strong sunlight and after the catches, fish would normally be chilled in ice receptacles to prevent them from being spoiled; but, those methods still had a loophole in preserving the quality of the fish because such method of freezing the fish only covered the top surface causing coldness being unable to absorb into the insides of the fish and the ice may press on the fish skins which could possibly make the fish skins looked unlikely nice and could not be used to create added value. Now that, the Faculty of Fisheries, KasetsartUniversity, has developed liquid ice innovation to eliminate these problems.

 

 

 

 

 

 

Assist. Prof. Dr. Jutha Mookdasanit, Head Department of Fishery Products, on behalf of the Research Team, has conveyed a result of the research to raise awareness of the benefits of Ozone-Slurry Ice to consumers, including fishermen group, aquaculture,aquaculture buyers, restaurants and the aquatic processingindustry, that the Ozone-Slurry Ice is a machine to produce fine ice that can turn seawater into ice crystals also with an ozone system that helps disinfect, as well. Such ice making is a method to take seawater for reducing temperature down to -2 degrees Celsius and the ice coming out from such process will look like jelly that helps maintain the colors and tastes of aquatic animals longer, does not cause fish meats from being bruised or compressed by the ice, but, the fish can longer be preserved under premium level with a degree of freshness, cleanliness and safety because we have an ozone system in the ice which will help reduce and destroy bacteria well and, in addition, the fish can be preserved for up to 12-14 days at a premium level or sashimi grade. Initially, our Research Team conducted the research on many types of fish such as cobias, groupers, red, gold and white snappers and has begun to do other aquatic animals such as shrimps, squids, crabs, which we are looking for suitable Slurry Ice Food applications with seafoods.

 

 

 

 

It is considered yet another significant step for seafood industry in Thailand which has been being developed forward through the co-operations of all parties including fishermen, aquaculture farmers, researchers and developers of aquatic products, teams of engineers, private and government sectors, to confirm that Ozone-Slurry Ice is a technology that can be used to maintain the quality of aquatic animals well.
